In case any of your party guests want to have at least one healthy bite to eat, they will love this. When I tested it on my friends they didn't even realize it was healthy. It really is that good. After you cook the beets, you can make this in just a few minutes.

INGREDIENTS FOR BEET AND HONEY-GOAT-CHEESE SKEWERS

• 4-5 large beets
• 1 10 oz. package honey goat cheese
• micro arugula
• a couple of basil leaves
• skewer sticks
• balsamic glaze or a squeeze of fresh orange (optional)

Cook the beets according to my recipe. Let them cool completely and carefully cut into small cubes, about 1 1/2 inch square.

Cut the goat cheese into equal size cubes.

Carefully assemble by pushing skewer through the beet, then the cheese, then another beet. 

Arrange on a bed of micro arugula. Garnish with basil.

You can drizzle balsamic glaze or squeeze the orange juice on at this time if you'd like a little more flavor. 

Serve at your Super Bowl party and hope your team wins!
